No-Bake Coconut Chocolate Bounty Bites (Raw Vegan Recipe)

 

Going raw vegan for a month has many benefits, and raw desserts are one of the best perks. Who wouldn’t want to enjoy rich, flavorful treats without the guilt? These bites are made from whole-food ingredients and are simple to prepare.

They’re delicious, quick to make and keep well in the fridge for at least a week, so you can snack on them whenever you need an afternoon pick-me-up or something to take on the go.

 

 

You can tuck a nut or a dried berry into the center of each ball for a pleasant surprise — pictured above is a hazelnut, though any small filling works well. (Fun fact: I’m allergic to hazelnuts, but I still like to experiment!)

After shaping the balls, roll them in toppings such as desiccated coconut, cacao powder, chia or hemp seeds, or any other preferred coating. For these I used desiccated coconut finished with a dusting of spirulina and beet powder for color.

Raw “Bounty” Bites

Easy, delicious and quick-to-make “bounty” bites made from whole-food ingredients.

Ingredients

  

  • 1/2 cup pecans
  • 1/2 cup dates
  • 3/4 cup desiccated coconut
  • 2 tbsp cacao powder
  • 1 tbsp flax seed

Instructions

 

  • Place all ingredients into a food processor and blend until the mixture comes together and can be rolled into small balls. If desired, press a single hazelnut or other dried fruit into the center of each ball before rolling in your choice of topping. Store the finished bites in the fridge or freezer for longer keeping.
