Ready for an easy weeknight dinner? If you haven’t tried making enchiladas at home, you’re in for a treat. These Green Chile Beef Enchiladas are flavorful, fast, and one of my go-to meals when I need something satisfying without a lot of fuss.

These beef enchiladas, finished with a tangy green sauce, are simple to prepare and easy to personalize. Add extra shredded cheese, diced tomatoes, or sliced jalapeños for more texture and heat—this recipe adapts well to your preferences.
What I love about these Green Enchiladas with Beef
Soft flour tortillas are filled with seasoned beef and cheese, then topped with green enchilada sauce and more cheese before baking. They’re a quick and tasty twist on taco night and a reliable option when you want a comforting, crowd-pleasing dinner.

These enchiladas are versatile: I usually make them with ground beef, but ground turkey, chicken, or chorizo all work well. They can be assembled ahead of time and baked when you’re ready, and they freeze nicely if you want to double the batch and save one for later.

How to make these easy Green Chile Beef Enchiladas
Start by browning the ground beef over medium heat and draining any excess grease. Stir in the diced green chiles, the taco seasoning, and the water. Let the mixture simmer until it thickens slightly.
Pour half of the green enchilada sauce into the bottom of a 9×13-inch baking dish. Fill each tortilla with a portion of the meat mixture and some shredded cheese, then roll and arrange seam-side down in the dish. Spoon the remaining sauce over the rolled enchiladas, sprinkle with extra cheese, and bake at 350°F for about 25 minutes, or until heated through and the cheese is melted and bubbly. Enjoy!
Substitutions & Additions for these Enchiladas
- Try ground turkey, ground chicken, or chorizo as an alternative to beef.
- For extra heat, add a chopped jalapeño or sliced pickled jalapeños.
- Use pepper jack or another spicy cheese for more flavor.
- Substitute shredded cooked chicken breast for a lighter option—just cook and shred the chicken first.
- Stir in some salsa or cooked vegetables to add more flavor and texture.
