February 2018: Seasonal Recipes and Tips for Cooking Less in Winter


We’re Back with Another Out of the Kitchen Post – Here’s What We’ve Been Up To in February

Salsa discovered he likes sitting in the warm dryer — a cozy spot if you ask me. The second photo shows my boys just hanging out and enjoying the moment.

For date night we visited a local steakhouse where I enjoyed a whole rack of ribs. Afterwards we hit the arcade, played classic games, and cashed our tickets in for tiny plastic dinosaurs — a silly, fun evening.

For birthdays, each niece and nephew chooses the cookie they want and I bake and mail them. My youngest niece selected strawberry lemonade cookies — they’re easy: one box strawberry cake mix, one box lemon cake mix, plus a few pantry staples. In the second photo, Ryan is experimenting with cooking and working on homemade hash browns — I love that he’s always willing to try something new.

Hi Salsa! I worry when he puts his head between the railing — I don’t want him to get stuck. The second photo shows an amusing thrift-store find: Ryan and I picked up picture frames at Goodwill that still had photos inside, and he used one to prank a coworker. Note to self: remove photos before donating frames next time!

Valentine’s Day pizza made the holiday simple and fun.

We also took a family Valentine’s Day photo — this was the best one we managed. In the second photo, even Salsa seemed mesmerized by the Olympic ice skaters.

Ryan surprised me with a jigsaw puzzle he made. The second photo shows progress on the shiplap project — we’re slowly getting there.

Ta-da! We completed the entire front of the fireplace. The sides still need work, and then I’ll putty nail holes, sand, prime, and paint — so the project isn’t finished yet. The second photo celebrates a small victory: my hair finally fits in a ponytail again, which felt like a big deal after having it short for so long.

This spot is Salsa’s favorite place to lounge if you’ve been following along. The second photo marks a milestone I celebrated — reaching 20,000 Instagram followers. Thank you to everyone who follows along!

That cat is always getting into something. In the second photo I’m showing off my office space — it’s handy for storing blog supplies, though I’m not a fan of the inevitable clean-up.

Opening Up…

February was a mostly low-key month. We received a heavy snowfall over the course of a week, so shovels got a lot of use, then everything melted and we enjoyed an unseasonably warm stretch that I loved.

Both of us stayed busy with Bible studies, gym sessions, racquetball, and meetings, so the month seemed to fly by. February always feels shorter than other months even though it’s only a few days shorter.

The shiplap wall is still a work in progress. I need to finish the sides of the fireplace, then fill nail holes, sand, prime, and paint — it will take more time. It already looks great and I miss having decorations on the mantel, which is the main thing motivating me to finish.

Other than that, not much more to report this month. We’ll be back with another update next month!
