Warm, juicy grilled peaches paired with cool vanilla ice cream and finished with a generous drizzle of bourbon caramel sauce make for a simple, crowd-pleasing summer dessert.

We return to this recipe every summer because it’s fast, flexible, and consistently loved by family and friends. You can grill the peaches outdoors or use an indoor grill pan. It comes together in about 20 minutes—or under 10 if you have the bourbon caramel sauce ready. The recipe scales easily for a crowd or for just a couple of servings, and you can customize toppings to your taste, such as nuts, crumbled cookies, fresh herbs, or chocolate.

I recommend making extra bourbon caramel sauce; it’s delicious on these peaches and on many other treats.

Grilled Peaches with Bourbon Caramel Sauce Ingredients

Notes on ingredients:

  • Bourbon caramel sauce: A simple homemade sauce made from granulated sugar, heavy cream, butter, vanilla, bourbon or whiskey, and a pinch of sea salt.
  • Fresh peaches: Choose ripe peaches that are slightly soft but still firm enough to slice and hold shape on the grill.
  • Vanilla ice cream: Classic vanilla is my favorite with this dessert, though Greek yogurt, whipped cream, or mascarpone also pair well.

How To Grill Peaches

You can grill peaches on an outdoor grill or on a stovetop grill pan—both work well.

  1. Heat the grill. Clean the grates and preheat to medium heat.
  2. Prep the peaches. Halve and pit the peaches, then brush the cut sides lightly with a neutral oil to prevent sticking and add flavor.
  3. Grill the peaches. Place peaches cut-side-down on the grill. Cook about 3–4 minutes until grill marks form and the fruit softens slightly. Flip and cook 2 more minutes. Remove and arrange cut-side-up in serving bowls.
  4. Serve. Add a scoop of vanilla ice cream, drizzle with bourbon caramel sauce, and serve immediately.

Possible Variations

Make this dessert your own by trying any of the following:

  • Add nuts. Sprinkle toasted walnuts, pecans, or almonds on top.
  • Add cookies. Top with crumbled gingersnaps or graham crackers.
  • Add fresh herbs. Garnish with finely chopped mint or basil for a bright note.
  • Use different fruit. Try nectarines, pears, apples, pineapple, or bananas instead of—or alongside—peaches.
  • Skip the grilling. If pressed for time, serve raw ripe peaches; they’re delicious too.
