I’m writing this from a cruise ship, which makes coconut feel especially fitting. My family and I are on vacation at sea, moving from port to port, discovering new places and learning about different cultures. Just yesterday we visited Cozumel and walked among the remains of a Mayan temple. Standing there, I tried to imagine life in that ancient civilization — it was a moving, humbling experience.

It was meaningful to be at a site connected with the Mayan calendar right as a new cycle began. Every stone seemed to carry stories and traditions passed down through generations. These Coconut Treats are a coconut lover’s dream—simple to make and perfect for the holidays or any time you want a sweet, coconut-forward bite.
Ingredients
- 3 cups unsweetened shredded coconut
- 5 tbsp coconut oil
- 1/2 cup xylitol, or preferred sweetener
- 2 tsp vanilla extract
- 3/8 tsp sea salt
Instructions
- Line a baking sheet with parchment paper and set aside.
- Combine all ingredients in a food processor and process about 3 minutes until the mixture forms a moist, cohesive batter. Scoop roughly 2 tablespoons and press firmly to roll into a ball, ensuring it sticks together. Place each ball on the prepared sheet and repeat until all mixture is used. Chill for 1 hour before serving.
