  • 2 tsp Baking Powder
  • 1/2 tsp Kosher Salt
  • 1 ½ tsp Cinnamon

  • 1/8 tsp Cardamom
  • 1 Large Egg
  • 1 Yolk
  • 1 ½ cups Dark Brown Sugar

  • 2 tbsp Unsalted Butter, melted
  • 2 tsp Vanilla

  • 1/2 cup Unsalted Butter, at room temperature
  • 1 cup Dark Brown Sugar
  • 2 tbsp Maple Syrup
  • 3 tbsp Heavy Cream
  • 4 tsp Maple Extract
  • 1 tsp Vanilla
  • 3-4 cups Sifted Confectioners Sugar(360-480g)
  • 1 cup Pecans, chopped or crushed

  • Preheat oven to 350°F (175°C). Spray four donut pans with baking spray. In a large bowl whisk the egg, egg yolk, dark brown sugar, buttermilk, melted butter, and vanilla until combined.
  • In another bowl whisk together flour, baking powder, salt, cinnamon, allspice, ground ginger, and cardamom until uniform.
  • Add the dry ingredients to the wet and mix just until smooth. Do not overmix.
  • Pipe the batter into the prepared donut pans, filling each cavity about half full. Tap the pans gently on the counter to level the batter.
  • Bake for about 11 minutes or until a toothpick inserted into the center comes out clean. Cool completely before glazing.

Maple Glaze

  • In a small saucepan over medium heat combine butter, brown sugar, and maple syrup. Bring to a simmer and cook until the sugar is mostly dissolved.
  • Remove from heat and stir in heavy cream, maple extract, and vanilla until combined.
  • Gradually whisk in sifted confectioners’ sugar until the glaze is thick and smooth. Dip each cooled donut into the glaze, then immediately sprinkle with crushed pecans if using. Let the glaze set before serving.

Notes

To measure flour accurately, spoon it into the measuring cup and level off with a straight edge. Do not pack the flour. For best accuracy weigh the flour (1 cup = 120g).
