Quick and Easy Beef Bowls
This dish delivers big flavor with minimal effort. The idea came from adding gochujang to a tomato-based sauce for extra depth — the combination of ketchup and gochujang balances sweet, tangy and spicy notes beautifully. Served over rice, it’s comforting and versatile, and it reheats well for lunches or dinners throughout the week.
Ingredients
Most ingredients are common in Korean cooking and are available at Korean markets or in the Asian aisle of larger grocery stores.

- Ketchup: Tangy, slightly sweet base for the sauce.
- Gochujang: Korean red chili paste that gives heat and umami.
- Rice vinegar: Adds bright acidity to balance the sauce.
- Soy sauce: Brings savory depth.
- Mirin: A touch of sweet rice wine for complexity.
- Garlic: Aromatic and savory.
- Honey and sugar: Sweeteners to round out the spice.
- Gochugaru: Korean red pepper flakes for extra heat and mild smokiness.
- Onions: Sautéed for a sweet, savory base.
- Ground beef: The main protein; a plant-based ground alternative works to make this vegetarian or vegan.
How to Make Gochujang Beef Bowls
This recipe is quick, especially if you pre-cook the onions briefly in the microwave for speed.
- Make the sauce
- Cook the onions
- Cook and season the beef
- Reduce the sauce

Lisa’s Recipe Tips
- Microwave the onions: Dice onions and microwave them covered for 1–3 minutes until translucent. This speeds up stovetop cooking and saves time, especially on electric ranges.
- Taste and adjust: After whisking the sauce, taste and tweak heat or sweetness by adding more gochujang, gochugaru, or honey to suit your preference.
- Meal prep and freeze: Portion and freeze for quick meals. Thaw overnight in the fridge and reheat in the microwave or on the stovetop.
Serving Suggestions
Serve the beef over steamed rice and top with sesame seeds and chopped scallions. Fresh, cooling vegetables like cucumber, lettuce, tomatoes, or bell peppers balance the spice. The saucy version also works well tossed with pasta or noodles. Serve alongside quick kimchi or a simple cucumber salad for a bright contrast.
How to Store Gochujang Beef
Store in an airtight container in the refrigerator for 3–4 days. For longer storage, freeze in a freezer-safe container for up to 2 months. Thaw in the fridge overnight before reheating.
Replace ground beef with crumbled tofu, textured vegetable protein (TVP), shredded tofu, or your favorite plant-based ground meat alternative.
