This recipe uses ground turkey for a lighter result, but ground beef, pork, or veal can be substituted if you prefer.

Ingredients
- 1 lb ground turkey, not breast meat
- 2 slices soft bread, crusts removed
- 2 tablespoons milk
- 1 large egg, lightly beaten
- 3/4 teaspoon salt
- Freshly ground black pepper
- 1/3 cup onion, finely chopped
- 1/3 cup celery, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 2 tablespoons vegetable oil
- 1/4 cup low-sodium chicken broth

Tear the bread into small cubes and place them in a large bowl. Drizzle the milk over the bread and use your hands to press and mix until the bread absorbs the milk. Add the beaten egg and mix to combine.

Add the ground turkey, salt, pepper, chopped onion, chopped celery, and parsley. Using your hands, mix everything thoroughly until evenly combined.

Form the mixture into six evenly sized patties and set them aside. Tip: Turkey mixtures can be wet and sticky; lightly oiling your hands helps shape the patties more easily.

Heat the vegetable oil in a nonstick skillet over medium-high heat. Add the patties and brown for about 4 minutes per side, until a golden crust forms. Pour in the chicken broth, cover the pan, and continue cooking, turning the patties occasionally, until they are no longer pink in the center, about 2 to 4 more minutes.

Transfer the patties to a plate and let them rest for 5 minutes before serving. Resting helps the juices redistribute and makes the patties more tender.
Notes
We recommend a hearty, dense bread such as sourdough or an oatmeal loaf for best texture and flavor.
