Passion Fruit Eton Mess with Tangy Curd

Passion fruit curd isn’t just for tiny glasses—use it in large dessert glasses topped with whipped cream, crushed meringues, fresh berries, and toasted coconut for a classic Eton Mess.

According to culinary tradition, the Eton Mess originated at Eton College in England as a simple dessert of sliced fruit and whipped cream or ice cream. Today it’s known for its layered mix of fresh fruit, whipped cream, and crunchy meringue pieces.

The meringue pieces are the unsung heroes: they introduce a light, crispy contrast to the soft cream and juicy fruit.

You might wonder whether Eton Mess is just a trifle in disguise. They both use layers, but a trifle is denser and cakier. Eton Mess is airy and fleeting—best enjoyed soon after assembly before the meringues soften and dissolve into the cream, leaving little sugary pockets.

It’s also extremely easy to make: buy or bake meringue cookies, lightly whip cream, toss them together with fresh fruit and curd, and layer in glasses. I used passion fruit curd because I had some on hand, but any fruit curd or jam works well.

Feel free to personalize—add a drizzle of caramel or chocolate, a sprinkle of toasted nuts or coconut, or even a few sprinkles for fun. The point of an Eton Mess is that it’s delightfully messy and forgiving.

Ingredients

  • 1 lb strawberries, fresh, washed, hulled, and coarsely chopped
  • 3 tbsp granulated sugar
  • 16 vanilla meringue cookies, coarsely broken
  • 1-1/2 cups heavy cream, chilled
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups fruit curd (passion fruit curd works beautifully)
  • Toasted nuts or coconut, optional for topping

Instructions

  1. Mix the strawberries with the granulated sugar in a small bowl and set aside to macerate while you prepare the rest of the dessert.
  2. Coarsely chop the meringue cookies so they’re bite-sized but not powdered.
  3. In a chilled bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip until firm peaks form, taking care not to overbeat.
  4. Gently fold the chopped meringues into the whipped cream.
  5. Assemble the glasses by layering a spoonful of whipped cream with meringues, then fruit curd, then strawberries. Repeat until glasses are filled. Finish with a swirl of whipped cream and any desired toppings. Serve immediately.

Recipe Notes

For best texture and flavor, eat Eton Mess shortly after assembling. The meringue will soften over time and create small sugary pockets in the cream.

These recipes are developed using weight measurements, and using a kitchen scale is recommended for baking. Volume measurements are provided if you prefer cups. Keep in mind that weight and volume are not always interchangeable by the simple rule “8 oz = 1 cup.”
