Description

The gooey plum filling sandwiched between a chewy crumb base and a crunchy streusel topping makes these Plum Crumb Bars simply perfect. Bright lemon juice helps balance the sweetness, while warm spices enhance the fruit’s natural flavor.


Ingredients

  • 4 cups thinly sliced, pitted plums (about 6–8 medium plums)
  • 3 tablespoons Wondra® quick-mixing flour
  • Juice of 1/2 lemon
  • 3 cups all-purpose flour
  • 1 1/2 cups old-fashioned oats
  • 1 1/2 cups dark brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) cold unsalted butter
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F. Line a 9×13-inch baking dish with parchment paper and lightly grease it.
  2. In a medium bowl, toss the sliced plums with the Wondra flour until well coated. Add the lemon juice, stir to combine, and set aside to macerate.
  3. In a large bowl, whisk together the all-purpose flour, oats, brown sugar, baking soda, cinnamon, nutmeg, and salt. Cut in the cold butter and stir in the vanilla until the mixture resembles coarse crumbs. Use a pastry cutter, two forks, or your hands.
  4. Reserve 1 1/2 cups of the crumb mixture for the topping. Press the remaining crumbs firmly into the bottom of the prepared pan to form the base. Spread the plums evenly over the crust, then sprinkle the reserved crumbs on top.
  5. Bake 40–45 minutes, or until the topping is lightly golden and the filling is bubbling. Allow the bars to cool at least 30 minutes before lifting them from the pan and cutting into squares.
  6. Store in an airtight container in the refrigerator for up to 4 days.
