This recipe uses chicken thighs for extra flavor and moisture, and builds the sauce in layers so you get depth without a long list of steps. You brown the chicken for color, set it aside, develop the sauce from onions, garlic and tomato paste, then finish with cream and cold butter for a silky finish. The method keeps things simple and resilient — perfect for busy nights when dinner nearly goes wrong but still comes together beautifully.

Equipment

  • Large skillet or pan
  • Boning knife or sharp knife
  • Cutting board
  • Mixing bowl
  • Wooden spoon or spatula

Ingredients

  • 4 Boneless skinless chicken thighs
  • 3 tablespoon Diamond Crystal kosher salt (estimate) — lightly dust

Spice Blend

  • 1 tablespoon Cumin
  • 1 tablespoon Garam masala
  • 1 tablespoon Ginger
  • 1 tablespoon Paprika
  • 1 tablespoon Dad Dust (see notes)

Aromatics

  • 1 Large onion, diced
  • 9 Garlic cloves, minced

Cooking Fats

  • 3 Unsalted butter
  • 1 tablespoon Avocado oil

Sauce

  • 1 teaspoon Chicken base
  • 8 oz Tomato paste (one tube or small can)
  • ½ qt Heavy cream
  • Water, small splashes as needed

Instructions

Mix the Spice Blend

  • Combine cumin, garam masala, ginger, paprika and Dad Dust in a bowl.
  • Lightly season both sides of the chicken with kosher salt.
  • Coat the chicken on all sides with the spice blend, rubbing it in.

Prep the Aromatics

  • Dice the onion.
  • Smash and finely mince the garlic.

Brown the Chicken

  • Heat a pan over medium heat — keep it moderate to avoid burning the spices.
  • Add about 3 tablespoons butter and a small splash of avocado oil if needed; let melt.
  • Brown the chicken lightly on both sides for color and flavor, not to cook through.
  • Remove the chicken and set aside.

Build the Sauce

  • Add the diced onion and garlic to the same pan.
  • Stir and scrape the bottom of the pan, adding small splashes of water as needed to release the browned bits.
  • Cook about 2 minutes until the onions soften.
  • Stir in about 1 teaspoon chicken base and cook roughly 3 minutes.
  • Add the entire tube of tomato paste and cook about 2 minutes to deepen the flavor.
  • Sprinkle in a small amount (about 1 teaspoon) of the earlier spices, omitting Dad Dust; adjust later if needed.

Simmer

  • Pour in heavy cream, adding enough to form a full sauce.

Return the Chicken

  • Return the browned chicken to the pan and simmer on low for about 20 minutes.

Finish the Chicken

  • Remove the chicken and cut into bite-sized pieces.
  • Return pieces to the sauce and simmer about 4 more minutes, until an internal temperature of at least 165°F and no translucency remain.

Finish the Sauce

  • Turn off the heat and stir in 4 tablespoons cold butter until melted and smooth to enrich the sauce.

What makes this Easy Butter Chicken stand out is how forgiving it is. Browning the chicken adds flavor without finishing the cook, so you can focus on the sauce. The sauce is built gradually from onions, garlic, tomato paste and cream, which allows the flavors to meld and gives you room to fix things if needed. That reliability makes it a solid choice for busy nights.

Why This Easy Butter Chicken Works So Well

Control is the biggest advantage. Everything happens in one pan so flavors concentrate and nothing needs extra attention. Browning the chicken first creates depth without risking dryness because it finishes in the sauce later.

The spice blend balances warmth and aroma without too much heat. Using paprika keeps the dish mild and family-friendly. Dad Dust — a blend of granulated garlic, onion and a touch of MSG — adds background savoriness that supports the spices without overpowering them.

Onions and garlic do a lot of the heavy lifting. They soften and integrate into the sauce, lending body and sweetness. Even if the aromatics seem excessive at the start, they cook down into a smooth base that carries the other flavors.

One Pan Cooking With Big Payoff

The one-pan approach keeps cleanup minimal and concentrates flavor. Deglazing with small splashes of water pulls the browned bits into the sauce for added depth. Tomato paste is cooked briefly before cream is added to deepen the tomato flavor and add body. Once the cream is incorporated, the sauce becomes rich enough to finish the chicken gently.

Cutting the chicken after the first simmer keeps the meat tender — it finishes quickly in the sauce and stays juicy rather than tightening up. The result is a saucy, satisfying dish with minimal fuss.

Easy Butter Chicken That Gets Better Later

Stirring cold butter into the finished sauce off the heat gives it a smooth glossy finish and richer mouthfeel. The dish pairs well with naan or simple sides, though it stands on its own thanks to a balanced sauce that doesn’t overpower the chicken.

Leftovers improve overnight as the flavors settle and deepen, making this a great option for planning ahead without extra work.

A Reliable Dinner You Can Trust

This recipe delivers on weeknight promises: easy prep, minimal cleanup, and a satisfying result. It’s forgiving if you get distracted, simple to adjust, and it builds confidence by showing that layered basics can outperform complicated techniques. Even when things almost go sideways, this butter chicken is easy to save.

That combination of ease and flavor is why you’ll return to it again and again.
